The Parmonie look like chips, but do not share their basic ingredient: the ingredients are Parmigiano Reggiano DOP aged for 24 months, olive oil, flour and salt. More importantly, they are not fried, but baked.
They are produced without the addition of preservatives, chemicals or colouring agents, and are packaged in tubs or bags with a protective atmosphere, in order to guarantee the freshness and aroma of the product for six months.. The main features of the Parmonie are the high quality of the product, thanks to the use of the highest quality ingredients such as Parmigiano Reggiano D.O.P. aged for 24 months and olive oil obtained from the Tuscan hills.

Parmigiano Reggiano DOP is something more than a cheese, it is a poem of flavours that tradition has given us. A unique and extraordinary journey covering nine centuries, which is still done today, in the same area and using the same techniques.
Italian olive oil is one of the products that makes us the envy of the world, the juice pressed from the olives originating from the Tuscan hills make a rich and complete food. We have selected this carefully to enhance our Parmonie.
We use only 24-month aged Parmigiano Reggiano DOP to make Parmonie.

CONSORTIUM FOR THE PROTECTION OF PARMIGIANO REGGIANO
The Parmonie passed the control of the Consortium for the Protection of Parmigiano Reggiano and they have obtained the authorisation to use the denomination “Parmigiano Reggiano DOP leaves, baked and flavoured with olive oil” as well as “24 months aged Parmigiano Reggiano Parmonie”..
CONSORTIUM BIBBIANO LA CULLA
Armonie Alimentari Srl has been authorised to use the brand “Bibbiano la Culla”. The brand indicates that the Parmigiano Reggiano used to produce Parmonie is supplied by one of the cheese factories in the territory of Bibbiano.
Instead of adding (preservatives, antioxidants, “extracts of…”) we simply removed what is responsible for the problem: oxygen.
Using a high-tech packaging system we are able to guarantee all the freshness and fragrance of Parmonie for more than 8 months, without adding antioxidants, stabilizers or anything else.
How was that possible? By packaging the chips in a “protective atmosphere”. This process is based on a very complex technology, using sophisticated machines, but the underlying concept is very simple: we remove the oxygen from every package of Parmonie. Oxygen is responsible for the oxidative processes that alter the flavour and consistency of products like our chips, and so instead of adding (preservatives, antioxidants, “extracts of…”) we simply removed what is responsible for the problem.
